Green Garlic Basil Vinaigrette

This Green Garlic Basil Vinaigrette is a perennial favorite in our house! It simply has the best flavor and I have yet to meet someone who didn’t ask me for the recipe!

There’s something about the magical combination in this vinaigrette – it’s so pleasing to so many palates!

I recently used it on this Watermelon Radish Salad the combines the sweetness of honeydew, the pepperiness of radishes, and the freshness of cucumbers, and I was so pleased with the results. The surest tell-tale sign? My daughter could not stop eating, nor raving about it!

Ingredient Notes & Substitutions

The ingredients to make this green garlic vinaigrette are easy to find and readily available at most any grocery store. If you’re able, I would highly recommend grabbing anything you can at your local farmer’s market for the absolute best flavor.

Here are a few ingredient notes:

Parsley & basil: Fresh flat-leaf parsley and basil are key to this recipe and I would not recommend any substitutions.

Spinach: Another key ingredient in this recipe, the spinach bulks up the sauce and provides great green color and nutritional benefit. If you don’t have spinach, add more parsley and basil as substitutes.

Rice wine vinegar: The bright acidity that rice wine vinegar provides in this recipe sets it apart from other vinaigrettes. It’s absolutely spectacular and there are NO substitutes for this recipe.

Honey: In this recipe, honey is not used for sweetness, but just to round out and take the edge off the acidity. You can play with the amount to suit your taste, but the vinaigrette should not taste sweet. You could substitute agave if you don’t have honey – but honey really is preferable.

Limes: Bright green acidity that only l imes can bring are wonderful in this vinaigrette. Substitute a lemon, if you must, but lime is where it’s at!

Add all of the ingredients, except the olive oil, into the bowl of a food processor. Pulse to chop everything.

Then, with the food processor running, slowly stream in the olive oil, until well combined.

Taste the finished sauce, and adjust any of the seasonings to suit your taste.

Storage

STORAGE: To store this sauce, transfer it to an airtight container, and keep it in the refrigerator for up to 3 or 4 days. Please not that each day that you keep it, the quality will deteriorate. It is best enjoyed on the day you make it.

FREEZING: I would definitely NOT recommend freezing this sauce.

This sauce is best enjoyed the same day that it is made. You can certainly make it earlier in the day and store it in the refrigerator until you’re ready to use it.

No – you can definitely chop everything by hand. Just be sure to chop everything finely.

You sure can! If you are looking for a thicker consistency, just add some sour cream or Greek yogurt and some mayonnaise – delish!

Ingredients
  

  • 2 green onions
  • 1/4 cup basil
  • 1/4 cup parsley
  • 1/4 cup baby spinach
  • 1 clove garlic
  • 1-2 limes, small to medium (zest of 2, juice of 1)
  • 1/4 cup rice wine vinegar
  • 1 tbsp honey
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup olive oil

Instructions
 

  • Add all of the ingredients, except the olive oil, to the bowl of a food processor and pulse until everything is chopped.
  • Then, with the food processor running, add the olive oil until everything is well combined.
  • Set aside and allow flavors to meld.
