Combine the feta, Greek yogurt, cream cheese, lemon zest and honey in a food processor and blend until smooth and creamy.

Whip the Feta

Thinly slice the peaches, plums and cucumbers.  Slice the tomatoes and then cut into triancular shaped pieces.

Prep the Fruit & Veggies

Slice a crusty loaf of good quality bread and lightly brush both sides with olive oil

Over medium heat, grill the bread until toasty and well caramelized.  Stack up to serve.

Add a base layer of whipped feta to a large serving plate and top with tomatoes, peaches, plums, cucumbers, herbs, olives and a drizzle of olive oil.  ENJOY!
