Start by grating an onion into a bowl on the small holes of a box grater.

Add the spices, breadcrumbs, olive oil and egg and mix really well with a fork.

Next, add the breadcrumb mixture to the ground chicken and  gently mix, being very careful not to overmix it.

– Using a large cookie scoop or a spoon, scoop the meatball mixture into 2 tablespoon balls and place them on an oiled sheet pan.  Roast at 375 for 20 minutes..

In the meantime, make the pickles by slicing the cucumbers on the diagonal and place into a bowl.

To the cucumbers, add the kosher salt, sugar, fenugreek and turmeric.  Toss to combine well, and mix every few minutes to ensure everything is well coated.

Make the yogurt drizzle by combining the yogurt with the lime zest and juice.  Season with salt and pepper and thin with water until you achieve a drizzle consistency.

To serve, add meatballs to a plate with steamed rice and pickled cucumbers.  Drizzle with yogurt sauce and ENJOY!
