GRILLED LAMB BURGERS 

with Bacon & Mint-Jalapeno Chimichurri

INGREDIENTS

Add all of the ingredients into the bowl of a food processor  and process to a thick pesto-like consistency.

Make the Chimichurri

Taste the sauce and adjust any of the salt, heat, or sweet flavors to suit your taste.  It should be bold and tangy.  Set aside.

Divide the lamb evenly and form into burgers.  Remember to size your burgers according to the size of the buns you're using!

Prep the Burgers

Season both sides with salt and pepper and grill the burgers over medium-high heat for about 5 minutes per side.

Grill the Burgers

Flip the burgers only once and cook for about another 5 minutes.  Add cheese at the end, and then remove and let rest for 5 minutes before serving.

Finish the Burgers

Assemble the burgers by adding chimichurri to the bottom bun, then arugula, then burger, bacon and more chimichurri on top.  ENJOY!
